Tallberg has dedicated his career to promoting the connection between nature and gastronomy, bringing the richness of wild food into modern fine dining. His mission is to share the significance of nutrient-dense, delicious, and locally foraged ingredients as a cornerstone of Finnish cuisine.

An Exclusive Wild Food Experience

The special 3-course wild food menu for the evening is a collaboration between Sami Tallberg and Aihki’s Head Chef Ronni Hedegaard. Together, they create an unexpected yet perfectly balanced dining experience using the finest seasonal ingredients.

At the turn of March and April, the ultimate seasonal delicacies are fish roe and fresh wild fish, which will be beautifully complemented by wild mushrooms and herbs—bringing harmony and depth to each dish.

Who is Sami Tallberg?

Sami Tallberg (b. 1976) is an award-winning Finnish chef, food writer, and pioneer of wild food gastronomy. He is widely recognized for his expertise in wild herbs and mushrooms, as well as his passion for utilizing seasonal ingredients to their fullest potential. Sami loves to dive deep with the wisdom that active human-nature connection offers and highlights wild food as the very core of Finnish gastronomy.

His career began in London, where he worked at prestigious restaurants such as The Ivy and Rivington Grill Shoreditch. It was there, under the mentorship of renowned forager Miles Irving, that he adopted the philosophy of wild food and foraging.

Returning to Finland in 2008, Tallberg became a trailblazer in integrating wild food into modern Finnish gastronomy. He has worked with leading restaurants such as Carelia and Kämp Signe and has played a key role in developing multiple restaurant concepts.

Beyond his work as a chef, Tallberg is an international lecturer, consultant, and advocate for wild food, having led courses and events in over 20 countries. His books, including The Wild Herb Cookbook, have been widely celebrated and have cemented his reputation as one of the foremost experts in nature-inspired cuisine.

His contributions have been recognized with several prestigious awards, including the Finland Prize in 2012, and he served as Finland’s Wild Food Ambassador from 2012 to 2016.
